Get Shuckin’

Sandy’s Oysters Rockefeller

Happy National Oysters Day

To celebrate National Oysters Rockefeller Day, here's my dad’s version but I promise each time he makes something it’s slightly different. Last summer on a trip home to Virginia Beach, he taught my husband how to make his infamous Oysters Rockefeller. My dad was certainly in his element as he went about pulling this recipe together. There’s no written recipe, so I watched from the sidelines and captured via photos while my husband took notes. It was a shuckin’ good time!

Ingredients

  • Raw oysters, shucked

  • Rock salt

  • Fresh spinach leaves

  • Country ham (or crumbled bacon)

  • Asiago Cheese

  • Panko bread crumbs

  • Lemons

  • Parsley, garnish

  • Clean oyster shells (chef’s hint, save your shucked oyster shells)

Directions

  1. Preheat oven to 350 degrees

  2. Grab your favorite baking pan and layer rock salt, then layer oyster shells with inside facing up.

  3. Chop the country ham

  4. Chop the parsley

  5. Grate the asiago cheese or better yet buy shredded asiago cheese if you can find it

  6. Let’s start layering

    • one spinach leaf

    • raw oyster

    • cheese

    • country ham

    • Panko bread crumbs

  7. Bake for 12-15 minutes or until golden brown at 350 degrees

  8. Garnish with parsley

  9. Squeeze lemon juice

  10. Serve warm and enjoy!
